Thanks Avis! Zahavah/Gayle -- definitely try Humboldt Fog. It sounds like it's exactly what you're looking for.

@Zahavah/Gayle - the article references a cheese that may be the one you are thinking of. "Humboldt Fog is made by Cypress Grove Chevre, and it's got a beautiful layer of ash running through the middle of the cheese."

Nice post, very detailed. I love cheese (and not just camembert). My current faves, if you can tell by my own recent posts are 5-Spoke Creamery's Tumbleweed and Ermitage Raclette and a strong gruyere (which I can't find kosher so I can't at this point bring in to my home). Also a friend bought me something with a layer of ash in it -- no idea what it was, but it was heavenly.

Nice job pre-empting WaPo!

You are one of the few people who offers readers an easy way to print a post. My pet pieve is wanting to print a good blog post and having to waste a ton of paper to do it. So thank you, more people should adopt this practice of creating an easy way to print a post!

Yay for Fourme D'Ambert! It's my fave blue cheese!
UnieKaas Reserve gouda is one of my favorites on the harder side. My Whole Foods guy recommended it and it's almost nutty.
This is great advice - thanks!

Nothing is better in my book than the Cheese dude at eastern market. He's like a cheese Genie- whatever you want, he can sniff it out. No screwing around, and for the love of god, don't order the brie, it will take years to get back in his good graces. Its a good place to be.
