I have a tendency to improvise with recipes when I don't have the right ingredients but want to try it out *right now*. That said, I try to stick to them closely at least the first time because I consider it practice. Once I've made it once than I can confidently do it again knowing what I need to work on to improve it. And the more recipes I practice on, the more confident I can be when it's time to really improvise.

I adjust and improvise all the time, but maybe a little less so when baking as some things will just not work if not done as described. That doesn't stop me from reducing the amount of sugar though if I think it sounds too sweet or use raspberries in a blueberry muffin recipe.

Usually my improvisation turns out okay, but I have had things that really didn't turn out at all. Saying that though I have also stuck to recipes exactly as written only for them not to work!

I have to say though that I hardly ever get all my ingredients ready before I start. I usually prepare them as I go along, unless it's something complicated I do for the first time. D. gets everything ready first and I always think it takes him a lot longer. If I want to make a pasta sauce after I get home from work I get the onion sweating in the pan, while chopping the peppers and mushrooms and so on.

Right, I'll stop writing a novel now!

I must admit, I lean on recipes like a crutch. The only time I don't is when I have a whole bunch of odds and ends that need to get used up. Even then, I'll tend to use a search and list all the things I have and see what pops up.

Chronic messups? It's more like shortcuts when I'm baking - not creaming butter and sugar thoroughly, not premixing the dry ingredients, etc.
