I first encountered what our family calls "Ramen Salad" at a Murch Elementary School potluck picnic in Washington, D.C. Our friends Missy and Mike brought it and Missy was good enough to remember my request for the recipe -- handwritten on a sheet of notebook paper -- just a few days later. Which I promptly lost.

Sad story. But, a week or two after that, as my husband and I slid into the front seat of a rental car in Massachusetts, I pulled down the passenger-side visor to check the mirror and a piece of thermal fax paper that had been tucked up there drifted down into my lap. What was on it?

Ramen Cabbage Salad. Kismet. (Or vanity wins all -- the mirror, remember?)

I made this today and added leftover red pepper! Delicious. I've been such a mixed green snob, I forgot all about the potential of cabbage!
